In Korea, the summer season is bustling with people gearing up for dieting amidst the hot weather. However, one of the foods many people crave while dieting is undoubtedly noodle dishes. Noodle dishes are tasty, satisfying, and enjoyed by many due to their versatility in cooking methods. Today, I'd like to introduce healthy and delicious noodle dishes for those who can't give up noodles even while dieting.

Buckwheat Noodles

Buckwheat noodles are one of the recommended noodle dishes for those on a diet. Unlike noodles made from wheat flour, buckwheat noodles do not cause a rapid spike in blood sugar levels, making them excellent for weight loss. A rapid increase in blood sugar levels can trigger insulin production, leading to the storage of glucose as fat. However, buckwheat noodles have a lower glycemic index compared to wheat noodles, and they contain 'rutin,' a compound that helps regulate blood sugar levels, making them effective for weight loss. Buckwheat noodles contain approximately 136kcal per 100g, which is similar to regular wheat noodles. Additionally, buckwheat is rich in essential amino acids and vitamins that aid in weight loss. Vitamin P, in particular, helps burn abdominal fat, which can be highly beneficial for dieting. When choosing buckwheat noodle products, it's advisable to select those with 100% buckwheat content.

 

Tofu Noodles

Tofu noodles are an ideal noodle dish for those on a diet. Tofu, the main ingredient in tofu noodles, is rich in plant-based protein, making it very suitable for dieting. Unlike animal-based proteins, plant-based proteins found in tofu contain no saturated fatty acids or cholesterol, making them beneficial for health. Tofu noodles contain approximately 165kcal per 100g, and their protein content helps maintain satiety for a longer period compared to carbohydrates, aiding in weight loss. Moreover, tofu is rich in 'isoflavones,' substances that have anticancer effects and promote blood circulation, contributing to overall health.

 

Konjac Noodles

Konjac is a low-calorie food that is excellent for weight loss. Composed mainly of water and dietary fiber, konjac noodles contain only about 10kcal per 100g. The dietary fiber in konjac helps alleviate constipation, which can occur during dieting, and the 'allisin' compound suppresses appetite, aiding in weight loss. However, excessive consumption of konjac can cause symptoms such as abdominal bloating, gas, and diarrhea, as it expands in volume when absorbed water and is not absorbed by the body.
