Extracts from light roast coffee also show less increase in inflammatory markers like 'tumor necrosis factor-alpha' and 'interleukin-6' compared to extracts from other roast types. Since trigonelline and chlorogenic acid are destroyed during the roasting process, opting for lightly roasted coffee with pronounced acidity can enhance antioxidant effects.

However, individuals sensitive to acidity or experiencing discomfort after drinking coffee may not prefer acidic coffee. This is due to the potential for inducing heartburn or digestive symptoms. In cases of insomnia, cardiovascular issues, urinary disorders, gastrointestinal problems, consulting with a specialist before deciding on coffee consumption is advisable.
