Dakgalbi: Korea's Signature Stir-Fried Dish

Taste Atlas introduces Dakgalbi as "Korea's stir-fried chicken dish" and highlights its distinctive characteristics. This dish is prepared by stir-frying chicken, along with ingredients such as cabbage, rice cakes, carrots, and sweet potatoes, in a large cast-iron pan until all the ingredients are fully cooked. Additionally, it is noted for its essential spicy sauce made from red pepper paste, red pepper flakes, soy sauce, garlic, ginger, and onions, with the occasional addition of perilla leaves.

Unique Serving Style of Dakgalbi

One of the unique aspects of Dakgalbi is the way it is served at restaurants, where staff bring the ingredients to the guest's table and cook the dish (in front of the guest). This allows the meal to conclude with the creation of stir-fried rice in the same pan, accompanied by various vegetable side dishes. This serving style adds to the special experience of Dakgalbi.

History and Popularity of Dakgalbi

Dakgalbi has its origins in the modest cuisine of the 1960s in Korea and later spread from Chuncheon to other regions of Korea. While this dish can be prepared at home, it is more commonly enjoyed at specialized Dakgalbi restaurants. An assessment of people's liking for Dakgalbi revealed that 84% of respondents evaluated it as "good," while 16% indicated "no interest."
