Eggs are a versatile ingredient that can be easily enjoyed through various cooking methods. Whether eaten raw, as soft-boiled fried eggs, or in a scramble, eggs offer a range of possibilities. However, considering health and hygiene, it is advisable to consume eggs in a fully cooked state.

Fully cooking eggs helps the body effectively absorb the protein present in the eggs. Our bodies have an enzyme called 'trypsin' responsible for breaking down proteins. While eggs provide rich protein content, they also contain substances that interfere with trypsin absorption. Therefore, thorough heating is necessary. Consuming fully cooked eggs increases protein absorption rates to 91%, whereas eating them raw reduces this rate to 52%, as reported.

 

When consuming raw eggs, a component called avidin in the egg whites can bind with biotin in the intestines, hindering biotin absorption. Biotin, also known as vitamin B7, plays a role in the production of keratin protein, a vital component for hair health. Lack of biotin may lead to hair loss. Fortunately, heating eggs deactivates avidin, allowing effective biotin absorption. Hence, it is desirable to consume fully cooked eggs to ensure smooth biotin intake.

 

Consuming raw eggs poses a significant risk of Salmonella infection. Salmonella bacteria can cause gastrointestinal symptoms such as abdominal pain, diarrhea, and vomiting after an incubation period of 18 to 36 hours. Heating eggs to temperatures above 75°C eliminates Salmonella, making it crucial for vulnerable populations like pregnant women, infants, and the elderly to consume thoroughly cooked eggs. Additionally, since hands that crack or handle eggshells during food preparation can be contaminated with Salmonella, it is important to use hand sanitizers for proper hand hygiene.
